they make for great stir fry nuder. the trick is to drop them in boilent water for like 60-90secs max and then strain. get your pan very hot with your solids cooking and then dump the nuder in and add your liquids. shit's delicious

>now you add your protein or veggies and let them cook mostly or entirely
>blob of garlic paste (add later if you want, it's critical you don't burn your garlic but it must cook)
>add your nuder
>blob of chirri paste
>splash of chinese cooking wine, reduce
>blob of oyster sauce or hoisin
>splash of dark or dark mushroom soy for colour and u̶m̶a̶m̶i̶ savouriness
>splash of premium or light soy for flavour and salt
>some honey, sugar, or mandarin orange syrup for sweetness
>toss and reduce, reduce and toss
>remove heat and add sesame oil for finishing

Sometimes I change things up a bit, adding chili flakes, five spice, using sriracha or something else for spiciness, sometimes I'll dump a small can of mandarin oranges in syrup early in the process and reduce that instead of the wine and sugar. You can't really go wrong once you get the gist of it

I resisted adding any sweeteners to my stir fries for a long time, because I was insistent that the chinese cooking wine and oyster sauce were sweet enough, but actually the soy sauce and chili paste tend to be quite bitter alone, not to mention bok choy etc, and once I started melting a couple tsp of sugar or sweet orange syrup into the sauce it all turned around. Sweet + salty + spicy = the perfect Chinese noodles

Usually I use the LKK Chili Garlic Sauce. It's very unrefined; salty and just spice and garlic. It's not something you normally would use as a condiment but rather a raw ingredient because it's just pulped chilies which is pretty bitter.

Also the Koon Yick Wah Kee sauce works too, it also is not sweet by itself so it just adds what you want, but it's more of a dipping or finishing sauce imo while the LKK stuff is better as an ingredient you cook into your dishes. Both will work. ABC chili sauce tends to be too sweet as does Sriracha

throw them in water until they're warm. dont overcook them. you want them spongy with a bit of give, not so soft that they disintegrate.
best way to eat them is to boil them in curry sauce to make curry udon.
all the other udons taste like dishwater.

What do you do if you hate the texture of (you)don? It's always gummy and thick and chewy. I think they're the worst textured noodles I've ever had and I've had just about every noodle.
