Why are Americans so afraid of Offal meats?

I always see Americans calling it third world food but at the same time the same people post fast food threads, which is literal melted goyslop paste garbage grinded from the worst parts of animals. Are Americans afraid of healthy food?

I mean, the Liver for example is literally a nature's multivitamin. When prepared properly, it has creamy and pleasant texture, similar to Pate.

Most Americans eat liver occasionally. It's mot uncommon for lower or middle class to eat something like liver & onions or liverwurst sandwiches, and upper class like their foie gras or liver pate.
Sweetbreads had a bit of a renaissance in the haute cuisine world in the 2010s, it is still not uncommon to see them on a gastropub menu in a hipster area of any midwestern city.
Stuff like kidneys never took off, they get turned into dog food.
Chicken hearts are good at argentine steakhouses, and lengua is pretty solid at tacquerias.
