I just cooked green spaghetti for the first time, and it was quite delicious. The sauce includes:

- 2 poblano peppers

- 1 jalapeño pepper

- 1/4 onion

- 2 garlic cloves

- cilantro to taste

- 1/2 a package of Philadelphia cheese

- 1.5 cups milk

- 1 cup sour cream

- garlic salt to taste

First, roast the vegetables (except the cilantro) in a pan or comal with oil until golden brown and tender. Remove the skin from the poblano peppers, halve them, and remove all the seeds. Then, add all the ingredients, including the cilantro, to the blender and blend until smooth. Return the sauce to the pan and cook until it thickens. Season with garlic salt to taste. When you're satisfied with the seasoning, mix the sauce with the cooked spaghetti and enjoy!

Did your algorithm of southernliving or allrecipes recently tell you about green spaghetti that nobody I've ever talked to has heard of before?

I do want to try it, just odd seeing a food nobody has ever heard of now suddenly showing up twice within a week for me.
