1 cup flour
2 tbsp sugar
2 tsp baking powder
1/2 tsp salt
1 cup milk
2 tbsp butter
1 egg
1 tbsp oil

Place a skillet on medium heat. In a bowl, mix all ingredients until lumpy. Do not overmix!

Oil the pan with a paper towel, then add batter to the hot pan with a small measuring cup. When the sides are bubbling, flip with a pancake turner.

Serve with I can't believe it's not butter and a bottle of maple-flavoured HFCS, enjoy!

Personally I would grill it but if you can't do this, maybe sear it in a pan and then make a butter sauce with the font, little bit of shallots - white wine, white pepper, some herbs - you know...

If you are feeling lazy I would put it in the oven with olive oil, oregano and white wine (put some extra olive oil and white wine so when it's done you have a sauce at the bottom, maybe half a head of garlic) and put the broiler on the lowest setting - 10 mins from every side until the skin is crispy.

red snapper is my goto when I wanna make szechwan style ่ฑ†็“ฃ้ฑผ. pretty easy if you have the fermented bean paste (่ฑ†็“ฃ้…ฑ) handy. I keep a jar in the fridge just for this dish; it keeps for years.

> put a couple slits in the fish sides so it cooks evenly
> heat up a pan/wok big enough for the fish (get it smoking hot)
> swirl some oil around the hot pan til it shimmers
> fry fish cpl mins on each side (just try to crisp up skin since it will go back in with sauce; since the sauce is strongly flavoured, optional to season fish first, e.g. sprinkle salt or soy or cooking wine)
> remove fish to platter
> add bout 1.5 tbsp minced garlic, 1 tsp minced ginger, 1/4 cup chopped green onion to pan and stir fry bout 1 min til fragrant
> add bout 2-3 tbsp bean paste, fry cpl seconds and then add 1/4 cup water to make the sauce
> throw the fish back in, cover and cook til done, flipping once to get sauce on both sides
> plate with sauce and garnish with more chopped green onion (fancier to spoon a little hot oil on right before serving to sizzle the garnish)

wa lร . eat with rice and some stir fried greens.

Cut the fillets into 1-inch wide goujons
Make an egg wash with 1 egg and a 1/2 cup of milk then dredge it in this stuff
Deep fry for 4 minutes at 350F
The snapper throats can be breaded and fried the same way, they're a local delicacy where I am
