A ginger bug is a fermented culture used as a natural starter for homemade sodas and other fermented beverages. you basically grow the natural yeast that is in ginger by covering it it in water and keep feeding it sugar. pretty much the same as what's already happening in the recipe but this will kickstart it. you'll can also use it when you don't want to use more ginger

yes. if it's naturally carbonated it is alcohol. the co2 is a product of the sugar being converted to alcohol. if you want soda you don't let the bacteria eat all the sugar

pouring soda over ice causes lots of bubbles. all the carbonation is released. you’re left with flat soda. a true soda drinker will pour in soda to a glass then add ice to maintain crisp carbonation

I think it's best out of a refrigerated bottle but pouring over ice and or booze makes a nice display of carbonation for the video. Fermented soda is a little different, this has not been pasteurized so it continues developing carbonation as it approaches room temp.
