Tex-Mex by a mile. Gumbo, fried catfish, and pecan pralines are good, jambalaya and dirty rice are alright, and etouffee is okay but literally everything Tex-Mex is good when done right

i feel like a redditor doing the "Hey! Texan here!" at the start of my post, but i'm from DFW and am half cajun and grew up on cajun food made by my granddad (st martinville) and also spent quite a bit of time in houston and beaumont and those shitholes so i feel like i know both pretty well (and coincidentally they are 2 of my top 3 favorite cuisines the other being italian)
i think when it's at its best, cajun is better. but average texmex beats average cajun. i guess i'm just trying to stay texmex is more consistently good than cajun, but cajun has higher highs. but they're both fucking great.

there is cajun jambalaya, creole has tomatoes cajun doesnt. most of those dishes have a creole and cajun version that are pretty much the same

I say Cajun for the seasoned savory beans alone! Tex Mex is crap when it is compared with other Mexican food variety across America. I hate to say it but the restaurants in Los Angeles, Chicago, & New York City tend to focus on the far better and tastier expressions of Mexican flavor and food than Texas influenced kind. never been, most of the cajun food i ate as a kid was made by my granddad. ended up at pappadeaux maybe once or twice a year. back then it was much better than it is now, the quality has gone downhill
