Texan here!" at the start of my post, but i'm from DFW and am half cajun and grew up on cajun food made by my granddad (st martinville) and also spent quite a bit of time in houston and beaumont and those shitholes so i feel like i know both pretty well (and coincidentally they are 2 of my top 3 favorite cuisines the other being italian)
i think when it's at its best, cajun is better. but average texmex beats average cajun. i guess i'm just trying to stay texmex is more consistently good than cajun, but cajun has higher highs. but they're both fucking great.
