They're essentially just blenders that blend ice cream and then dispense it by forcing it out using mechanical compression and manual force. This is entirely different to a real soft serve machine, that use a liquid base, and that have an internal refrigeration system that rapidly chills the liquid while it's being whipped, churned and processed, this ensures micro-sized ice crystals, while also incorporating air. The dispensing system also works by being part of a pressurized system, meaning it dispenses with perfect consistency, structure and volume.
The Ninja will never produce proper soft serve, it will be icey, with large ice crystals and lack the air and volume of real soft serve, and the dispenser will be inconsistent and weak. You can make the exact same thing at home by simply putting ice cream in a blender, blending it and then transferring it to a piping bag.
