after that, you have a rostisserie, so it'll be evenly heated on both sides

buddy i don;t even know what you're cooking or how so it's very hared to say.

most of the time im trying to cook a steak i need temp checks and IF i'm not moving the steak around to get cooked on different parts, i will get an even steak.

i also have no idea why so many restaurants can't fucking do this. a steak should be moved around and i have to go to a fucking michelin starred restaurant just to get it

I always thought you just had to flip your steak one time and cook it the equal amount of time on the other side, I have never been told otherwise
