They're cheap, abundant, taste 95% the same as fresh, pack tightly, long shelf life, easy to make, good with almost any dish. Farmers can make a shit load of them and whatever is excess for their fresh sales can just be frozen and last forever. Easy fake health food for "See I eat healthy!" fatasses to claim they don't only eat junk because they microwave a pack of this slop once a week (before dousing it in a 1:1 ratio of ranch:veg).
Why are you surprised something like this is readily available everywhere?

I buy either those or the mixed veggies that also has corn and green beans. I add them to my ramen noodles or occasionally just heat them up with some butter as a veggie side with a pork chop dinner or something.
