norwegian farmed fish astroturfing convinced them that it was safe but desu it would probably have happened on its own with their novelty-seeking foodie culture just not to the point of becoming one of the standard default sushis

Vinegar and fermented rice was used to preserve fish I guess.
salt water fish has less parasites than in river fish, tuna with its thick muscle structure is also less prone to having big worms inside. They would inspect the fish as its being prepped and worms removed.

Salmon sushi was unknown in Japan until the 1980s when it was introduced by Norwegians and flash-freezing technology made it possible to eat without becoming riddled with parasites. Muh Japanese Tradition is just another scam by con artists like "Jiro". (I dunk my sashimi in ketchup btw.)

If you didn't slaughter and prep a live fish yourself, Or have it done right in front of you, I guarantee every fish you've had was flash frozen before you ever saw it.
Oh God I love going to Japan and sleezing out at a 30-40 dollar business hotel. I buy a big chunk of salmon and a bunch of strong zero 9% for just a few measly bucks and just have a fuckin night.
