What do you use in grilled cheese? I just made one with sharp cheddar. It's not bad, but I feel it's a bit boring.

>1 slice sharp cheddar
>1 slice american
Toasted with good butter and a little salt. If the bread is thick I add another slice of cheddar or gouda.

old cheddar (slightly younger than sharp cheddar, metls better)

Probably a little longer than the white. Depends on how crusty it is I'd imagine.
If I'm lazy and want it fast I toast both sides at the same with cheddar on one side and gouda on the other. Use a lid to melt the cheese while it toasts and only put the american on for the last 30 sec. The cheese doesn't really melt together as well but it halves cooking time.

You can use gouda to give it a creamier texture, and a sharp cheddar as well to give it a bit more bite. The risk with using two cheeses is that it can very easily feel like too much cheese.

same. i always use a slice of american and then some shreds of something with flavor. whatever we have around. i prefer shreds to slices for the non-processed cheese on a grilled cheese

Try not grilling it, butter the outside of the bread and use a frying pan on a low heat (so you melt the cheese before burning the bread) flip and do the other side.

yeah i don't even have a grill. i do it in the pan.
also, i'm a Chef John fan, so i do this thing i learned from his vids where you sprinkle cheese on the outside of the bread and give it like 30-60 seconds in the pan to carmelize. you wind up with a nice crisp cheese coating on the outside that is just awesome.

Good cheeses mentioned here, also realize you can season your cheese. I like e.g. garlic powder, chili powder, dried herbs, all depending on the cheese and what else I'm having with it
