I like chewy ones. Of the four main cookie textures I can think of (soft, snappy, crumbly and chewy), I strongly prefer chewy. If brownies or bar cookies count, I guess cakey/fudgy exist, too.

The soft stage is a special time that you only have access to if you make your own cookies at home. Ultra-gooey, not suitable for the whole batch which will firm up as it cools but a supremely soft texture. You can't experience that with your storebought ones so I get why you're mad.

They modify the recipe, not underbake them. That is the point of distinguishuing a difference between actual soft-baked and a storebought cookie labelled as such. It's not a technique, but a different recipe with different ingredients, and therefore different flavor and textures.

No anon, bake cookies yourself and see the difference. What I am referring to is a stage right after baking that cookies are in, even if after cooling they firm up to something you'd just call a regular cookie. It's a fresh-out-of-the-oven smell, taste, and feel. Cookies that are soft at room temp are a different thing and not what I'm referring to.
