My roommate had left some Chaat seasoning, and I decided to make some Chaat to use it up. I truly was not expecting much out of it, but HOLY SHIT, it's fucking amazing! Starts off with a surprisingly good mixture of sweet, spicy, sour, salty, crunchy, soft, dry, wet - and then you top it with savory chaat seasoning to blow it out the water. Subcontinental asians sure know how to vegan.

As for what it is exactly, calling it a salad imo is sorta for lack of a better word, since it ain't a trad. looking one. It's like calling a cookie or brownie a type of cake - not exactly wrong, but nobody calls em that; cookies and brownies are their own thing. I see chaat the same way, but I've never had other chaat though so take it with a grain of salt

It's easy to get foreign ingredients for me, but this ain't true for most, so I can't exactly recommend anyone make it. But, you ask for vegan recipes:

It all gets mixed, so split peas are ok. Taters should be soft/tender so some get mushed, but big/strong enough that not all of it will. Very big chunks aren't fun to eat

Cucumber + Onion + Tomato for sure. Red onion is normal but not req, and nobody will hate bell pep or jalap's if you want. Cilantro/parsley are nice
>Seasoning Note
It's about layering flavor, but not everything need taste the same. 'Peas/taters should be salted, but do the veggies need be too? Veggies add fresh/crunch; there's already seasoning elsewhere. Should the chutneys below be seasoned? As sauces, yes... but do they need be the same? No, but overlap seasoning to your liking

>Green Herb Chutney
Blend Cilantro + Mint + (Spicy) Green Pep + Garlic + Ginger + Lemon + Cold Water/Ice + Seasoning. Cold water/ice keeps em green. Be conservative with lemon juice and add as needed. Along with Salt, maybe some cumin is a simple choice for simple chutney
>Fruity+Sour Red Tamarind Chutney
Boil & blend SEEDLESS Tamarind (paste) + Opt. Dates in Water; strain if needed. Add lots of Sugar/Jaggary until the sourness becomes a back-note (leave some). Along with Salt, season to pair with the fruity flavor, like Kashmiri Powder + Ginger Powder + Cumin + Fennel + Black Pep
>Sweet+Sour Yogurt
Yogurt + Sugar + Opt. Water. I used honey and thinned greek yogurt with water to a sauce

>Req. Chaat Masala Seasoning
Idk, just buy it. Or buy all the above premade
>Opt. Pomegranate
>Opt. But Rec. Chip
Could use tortilla chips or stuff em all in Puri. If you can, get some Bombay mix Sev. Shit's so good

0.) Starch Base - Mix the 'peas/taters together. After the salt's absorbed, mix in a little of the veggies and chutneys, maybe the yogurt and seasoning

1.) Place Chips/Puri where you want, and add the Starch base to it
2.) Lay Veggies on Top of Starch Base
3.) Layer 3 Sauces on Top
4.) Layer Chaat Masala, then Fresh Herbs/Pomegranate, then Sev

/ck/ might be the very worst place to look for vegan recipes man, this is tendie town. Just google stuff or look on youtube for vegan versions of specific meals, vegan meals from specific cuisines, salad/buddha bowl recipes and sauces/dressings/vinaigrettes to go with them.

I like my brownies to be on the cakey side of things, and don't like nuts in dessert (besides pecans and occasionally sliced almonds). If you prefer fudgy nut brownies then go right ahead
