My secret green lemonade: 7lbs cucumber, 1lb lemons (peeled weight; zest them first, though). 1lb of sugar (you will not be using the whole pound).
Sugar in blender. Blitz into powder then remove.
Lemon in blender. Blitz smooth. Strain.
Put juice back in blender with the cucumbers. Blitz smooth. Strain.
Sweeten to taste with the powdered sugar.
Powdering the sugar helps it dissolve more readily. The cucumber juice in place of water gives the lemonade an ethereal green hue.
My real life O-ren Ishii friend (as in she's half Japanese, half Chinese-American; she's a fatty, though lmao) called it kappa lemonade because cucumber and also green.
The only downside is that if it sits, the colours start to separate into layers like what happens with tangerine juice so it needs to be shaken before pouring if you chill it in the fridge a while before serving.

Thoughts on oleo saccharum-based lemonade? I am a huge fan (I use chef john's recipe) but I can see why it is controversial in someone's expectations of what a lemonade *should* be

You can grate them, dry out the gratings and powder them for use as a spice. I keep the gratings as they are and powder them just before use, mostly on white meat roasts (mixed with powdered dry chilli, powdered peppercorn, powdered dry rosemary, olive oil and grated garlic to make a paste) but I use it in sweet stuff, too (lemon french toast with honey lavender syrup, lemon pancakes also with honey lavender syrup, lemon sugar cookies, lemon rice krispies treats) and a other savouries (pan-fried pork chops, lemon chicken sausages and lemon butter for seafood; so much lemon butter).

Thanks. I wanna be clear that I don't know if the variety of cucumber matters but I use "pickling" cucumbers or Persian ones since I find the large, waxed English type to be generally flavourless.

I prefer watermelon agua fresca
>1 small watermelon
>2 limes
>2-3 tbsp sugar
>(optional) handful of mint
>water
Scoop watermelon chunks out of shell into a tall jug, add juice of limes, sugar and mint, then enough water to cover the melon. Blend with a stick blender till no chunks remain, strain once into another container, then again back into a clean jug or bottle. Works great as a mixer for booze, or just top it off with some sparkling water and ice for a refreshing watermelon soda.
