I have eggs that are going to expire on September 3rd so I thought I would hard boil some of them. Now they are saying the hard boiled eggs are only good for a week to a week and a half after I hard boil them.

What gives? Is it BS? My dad use to keep them hard boiled for a month in the fridge.

It's probably gonna depend on the quality of the eggs and how fresh they were prior to boiling, but if you're finding that information online then whoever put the information out there is probably lowballing it so they won't get sued, assuming it's some website that writes articles.

Pretty fresh. They are still a little less than two months out. Growing up, I just thought cooking them would extend the life longer not shorten their lifespan.

If you're properly storing them and keeping them in their shell after boiling, not stripping it until you consume them then I don't see why it would shorten the shelf-life. Information online from websites needs to hedge their bets on people being retarded so a lot of site probably just blanket treat them like anything perishable in the fridge without consideration for the egg itself.

It's probably fine to eat, but the edge of the yolk boiled eggs turn green after a day or two in the fridge (or immediately if you overcook them). It's just not very nice.

I don't ever have an issue with the green ring which supposedly can be affected by the iron content in your water.

Yeah, back in the day if you needed food for a shirt weekend trip you just took hard boiled eggs no refrigeration needed. I thought they would last quite a long time as long as you don't break the shell.

boil and preserve them with plenty of vinegar, salt and spices, it'll be fine for a few days in the fridge without canning
