put too much salt in my brine and my my roast chicken is too salty
guess i could maybe cut off the meat and use it for noodle soup or something since simmering in broth would dilute it a bit
what would /ck/ do

Yeah I'd do the same. Shred or slice the meat smaller, bring to a boil with unseasoned water or broth, simmer for a bit, taste meat again. Add water to dilute or more salt to taste. Add veg, noodles, etc.

Nigga how? HOW? To make it so salty you can't eat it would mean doubling the usual amount.
But other than soup you could use it for fried rice or anything else where the meat is cut into small bits
