I thought it was common knowledge to boil pasta al dente to finish cooking by tossing them in the sauce a minute or two but clearly I overestimated people

2 weeks ago my wife took me out to a local Italian restaurant and I ordered a fettuccine Alfredo. They used fucking BOXED pasta. Not just that but the pasta was undercooked. So it didn't even absorb the sauce. Honestly it ruined the mood.

it's not good to assume anything in the culinary arts beyond moral objections to certain food e.g. cannibalism, shit, or inedible stuff. That being said, there are certain cooking traditions that are popular because they work well for their associated dishes and al dente is one of them.
You wouldn't want al dente pasta in chicken noodle soup, but it's the best way to cook pasta for any sauce-based dish.
