I used to dislike pho until I found a place that did it right. Every place before that either the broth was good and the noodles sucked or the broth sucked and the noodles were good. The place that finally did both right was a little Hawaiian bbq joint run by a Chinese woman from Hong Kong.

I was in Cambodia filming a gnarly vid for my youtube channel. Got a bowl of pho from a street vendor who looked like he hadn't bathed since 1974. I watched in awe as he pulled water straight from the Mekong River using a bucket that contained naturally fermented fish head residue and added the noodles, fresh grass, and a spring onion that he wrestled from the mouth of a local wild hog. Needles to say, I was blown away by the complexity of the flavors.

I think you confused Pho with Ramen. I can eat pho daily and not get sick of it, Ramen I'm done after a day or two. Japanese are way to subtle and light on flavor. I like foods with more character like Pho. The king of Vietnamese soups tho is Bun Bo Hue but that noodle soup will filter 90% of the normies on /ck/.

None of this has any connection with each other. The most common broths for ramen is shoyu, miso, and tonkotsu. Cold "ramen" is called somen. Pho isnt that popular in Japan, I've never even seen a restaurant.

The reason pho/ramen took over America is we have very little "soup" vendors. Soup is literally an after thought for most restaurants, typically done as a small side or appetizer. So no one was doing soup a main dish. And I will add those selling soup as a side were charging WAY too much for it - like $5-7 for a little ass bowl. So of COURSE ramen and pho came in and beat the fuck out of everyone when they offered large bowls of soup for like $10-12.

This is a shame, because a lot of restaurants have GREAT soup. You just can't ever fucking get a god damn bowl of it, it's got to be this tiny ass cup that is half a serving of soup. The closest we get is Olive Garden shit with unlimited soup and salad, which you'd need to get a fucking full portion of soup from the little cups they give you. Even the grocery store caps out their large as half the size of a pho bowl. We just can't compete.

It's always the Asian places that make meal sized soups properly. And for some reason, America never adapted that shit to our soups/stews.
