what the fuck do i do with all the eggs

so become big egg eaters. you can probably work eggs into just about every meal. make egg heavy dishes. quiches, frittatas, omelettes, devilled eggs. make homemade mayonnaise and hollandaise. make pickled eggs. do a lot of baking, and freeze it. give some to your family, friends and neighbours.

I have an egg ranch with 800 chickens. We got 400 recently. At the peak of our production when we had 500 birds we got over 2k eggs per week.

Bros Iโ€™m in love with duck eggs, I found the perfect method to cook them and make them shine.
Basically, Marco Pierre Whiteโ€™s recipe but with goat/beef ghee instead of butter.

Crack two duck eggs (2x 75-90 gr) into a small cold pan or pot (it has to be small because the eggs have to pool), add 1 or half a teaspoon of ghee and puncture the yolks many times with the edge of a silicone spatula to break them.

Turn on the gas stove or whatever on the absolute minimum heat setting and start mixing the eggs in a circular and constant motion, you have to do this until the end (it will take minutes to cook the eggs) and this is crucial because the low temp and the stirring allows the yolks and the whites to cook together at the same time without forming curds that alter the texture.

After the first minute of stirring add a pinch of salt and keep going and going until you feel that the eggs are becoming denser, then raise the pan from the stove and keep stirring to uniform the eggs are becoming mixture, at first they will look like theyโ€™re solidifying but keep stirring and they will turn creamy. Decide the final texture according to your tastes but the result should be a homogeneous luscious cream, fatty and decadent.

Pour the eggs on a toasted slice of bread, add salt flakes, pepper and chives.

Enjoy.

It's me, I have an update.

This morning I had an idea of mixing a duck egg with a chicken egg to make up for what was lacking in the soft scrambled eggs made with duck eggs only and goat ghee.

Listen, butter, clarified butter or ghee only. Do NOT use EVO oil, olive or seed oils, just use butter to achieve the smoothest result without altering the eggs flavor.

Basically, duck egg is very very dense and fat, it has few egg white and being denser than other eggs it cooks fast, so I decided to use a chicken egg to add more egg white and softness to balance everything.

The resulting soft scrambled still have a texture out of this world, super creamy and silky, but with the addition of the chicken egg they're less fatty and dense in your mouth, so I'm very very satisfied with this recipe and I think I will always adopt it from now (as far as duck eggs are available of course).

Today was a good day.
