it isn't. cheddar it perfectly acceptable. american gets used because it's an all rounder choice, but combos like 'mushroom swiss' exist because specific cheeses can be used with certain ingredients to great effect.

The best burgers I've made were with provolone. It's the perfect burger cheese in my book. Melts well, strong flavor but not overpowering, and best of all, it usually comes in a circle, like it was designed for burgers.

Brand isn't terribly important, just get the stuff that looks like this in the size of slices you want. White american doesn't taste any different and isn't as widely carried. If you need to get some from somewhere that isn't your normal supplier they may not have it.

American cheese is terrible and you should not put it on your burgers. The white kind is worse than the yellow kind. Just kind of a thick, flavorless, gooey blob. Sort of like if someone blew their nose on your hamburger.

If you are going to use American cheese, you should use Kraft for the same reason you should use Hershey's chocolate when making smores. It will taste even more off if you use anything else.

it still tastes unique (assuming you get a decent one e.g. not Kraph Singles) and if that's the flavor in your mind nothing else will suffice. It's good. Melted in a steak & cheese or on a burger or just cold on a salami sandwich. No it's not the best or specialmost cheese in the world, but it is one of a kind

USA cheese is the only cheese that belongs on a burger. If you don't like it then just don't use any cheese. it's not needed anyway.

I hate a big piece of solid, strongly flavoured cheese on a burger because some pretentious hipster retard had to make improvements to the classic formula, and instead of using his brain to consider the unique qualities of ingredients and how they will affect the final product he just slaps a more expensive and prestigious slice of cheese on the burg.

There are two products that are called "American cheese". Look at these two labels, one says "pasteurized process cheese" and the other says "pasteurized process cheese product". This legal distinction is important.
The former, the deli style American cheese like you'd purchase in blocks or from a deli counter, is actual colby and cheddar cheese with emulsifying salts to improve melting capability.
The latter, the "singles" product with individually wrapped squares, is essentially a cold coagulated cheese sauce that is made with added milk and whey. It is largely considered to be an inferior product to the deli style American cheese.
