I think she makes most of her money selling overpriced salads, boiled eggs and veggie party platters to the hospital and nursing home workers nearby (seriously, a container of fruit salad is $12 and a chopped salad is $14 and the platters start in the $60 range) so she sells the actual produce really, really cheap. For example, when I was there, baby spinach was $2/lb but a baby spinach salad, which uses only a half pound of the stuff but comes with dressing, croutons and a smattering of bacon crumbles, is $9 and the larger one is $15. I'm pretty sure bacon, stale bread and a packet of Ken's ain't worth the $8 upcharge.
