I ate donkey meat once, it was really tasty.
it was marinated in red wine and herbs and then braised in the same liqundtid

youse guys should watch this endearing video about mules (tl:dr; Jason Kingsley imported a mule and does a quick overview about them and some gentle first training exercises).

Also THIS IS FOOD RELATED because a lot of Mr Kingley's videos are about medieval foods and they're fantastic. Also for those interested, his video on medieval Halloween is my favourite.
