I was gonna make the same post about sushi, on account of it being conceived as a finger food that could pack and travel easily, and involved minimal cooking, but actually it's a load of twaddle and sushi as we know it (rolled rice with fish and fixins) only came about in the 19th century.

Probably a combintion of a lack of necessity, capital interest, low volume production and need to spruce it up to compete with other foods.

Most of them changed quite heavily from their origin to taste more appealing, which also drives up price.
Part of it is also that the time and labour investment in the past didn't matter as much.
Then there is the common switch in perception from poor people food to being desirable. For some time chicken wings were basically trash, only to be used as for stock or the like, these days they are well not pricey but have some value.
A bit like how lobster is now considered a delicacy.
If you can market it and get money out of it there is a motivation to sell all kind of stuff.

$20? Rice is one of if not the cheapest food out there, and roasted seaweed isnโ€™t even remotely expensive. Youโ€™re probably looking at under $1 for a pack of gim and the rice to eat it with.

Serbocroatians introduced the dogshit version of dolma with beef wrapped in sauerkraut into my country. Disgusting eastoid povertyslop. Fuckin' dolmades. I used to work at a greek restaurant and every week or so I'd have to wrap hundreds of those little bastards at a time. God that was the worst kitchen ever to prep for. Dolmades, souvlaki, moussaka, and don't get me fucking started on dealing with bad phyllo for baklava and spanakoptia.

Oh sure, it was just miserable to prep. It was the second job I ever had and my first was at a barbecue place where the most difficult prep items were pulling chicken meat off of bones and stacking the wood deliveries for the smoker. I miss working there but the owners basically drove it into the ground and the paychecks got unreliable to cash.
