What is your starch of choice to pair with steak and other proteins?

I like a nice baked potato, but frites are sometimes nice, too.

Honestly sometimes even a few toasted slices of bread are surprisingly delicious when paired with a nicely-cooked steak.

Mashed potatoes underneath that the steak sits upon. Even the best-rested steak will leave some small amount of juice and meaty seasoning bits on the place afterwards and a bed of mash makes sure that you get every last bit of it. How buttery depends on how fatty the cut is. Doing a baked potato instead feels like such a fucking waste once you do mashed right.
