Cilantro is a big filter for people. And it features in the "authentic" version.

Second, Mexicans SUCK at cooking beef properly. They are literal ass at it. Chicken, pork, and seafood they have down, but when it comes to beef they overcook it all. Results in Americans, who know better, fixing that shit right up. So while there may be better authentic versions, it's still handicapped by Mexico's shit cooking habits for beef.

Also not everyone wants to blast their tongues off and shit out fire. So mild = more popular. This is probably the biggest reason.
