I have a whirlpool wall oven and when I set the temp it will pre-heat to about 30F above the set point, settle back down to about 10F below the set point, and then climb again to 15F above the set point. It seems to me that the oven is having a hell of a time trying to reach and maintain the correct temperature. Is this pretty normal and does this mean I need to set the probe temp calibration down 15F? Just figured if check with you fellas.

It's normal, fluctuations of 10 or 20 degrees don't make much of a difference

If your oven is ever 1° off your set temperature for a single microsecond, throw it away and get a new one. You'll never be able to cook anything properly otherwise.

Hysteresis is a GOOD thing, or else the relay would quickly burn out.

true
but a lot of cheaper ovens have greater fluctuations
a serious cook should not buy cheap appliances
