When do you put the pineapple on? If you put it on at the beginning all the water will come out and sog up the crust in the oven. If you don't put it on at the beginning it won't adhere to the cheese.

it won't sog the crust up unless it sits pooled up for so long after taking it out. what you can do is pull it out partway and tilt the pizza and you can watch the water pool up, tilt it and carefully let it drain off the edge of the pizza or dab it off

i'm pretty sure there are pizza shills on this board who lurk and watch for trade secrets to be posted and then flame the posts. who do you work for? this is how the pros keep the water off their pizzas. you tilt the pie, the water pools up in one general area, you either tilt it further so that it drains off the side or you dab it off. go fuck yourself
