I make a shrimp alfredo with parmesan and romano cheese, though the secret star is the diced mushroom and red bell pepper. Very much comfort food for me and I love watching the cream sauce thicken as I add the cheese to it.

Smazeny Ser is the best (pic related), followed by Feta Fourno.
I don't have one favourite cheese. for creamy cheese i like Munster (must be runny!) the most. as for solid cheese I like Gouda. As for hard cheese Gruyere or Grana Padano are nice to snack

When you're looking at the cheese itself? Goat cheese really is the GOAT cheese. It's good by itself, it's good as a topping, it's good as a side dish. It can be a little strong so if you're not looking for a "star of the show" cheese then maybe skip on GOAT cheese.

When you're looking at "what can a cheese bring to a dish?" I'd say Parmigiano Reggiano. It's the most popular garnish for a reason.

I will never forget this super rare cheese my uncle had, I don't even know the name, it was shaped like queso de tetilla except creamy inside, shit was insane, stilton s good too

Was that some kind of quality cheese? From the previous pic it looks like snot and I'm very familiar with Lidl snotbricks.
The best ones are made from plain fresh cow cheese, but those aren't really available at the usual grocery stores and are locally sourced by most restaurants. I get mine from some homo vegan shop that just happens to sell local farm produce
