I need recipes/techniques for onions that retain the sharp taste but slightly softens it so I can wolf them down en masse without getting burned too harshly.

Like just to eat by themselves, or with other things? With other things slicing them very thinly retains their bite but makes them easy to eat in large quantities on things like salads. Get a mandolin and make them paper-thin.

Slice them super thin across the grain like pic related then put them in a container with a splash of vinegar and salt and shake it up. Perfect for piling high atop grilled meats.
