as someone who really likes fat, fat is NOT where the flavor is. I've had real A5 wagyu, snake river farms "wagyu" and regular old angus beef.

Yeah it's american they grain feed to fatten up the cows but it's less healthy fat and personally I find the taste is worse, just tastes very muted. It's more tender though but less marbling doesn't mean it's bad at all. You will often see Americans on here instantly dismiss a piece of meat because they just dont know any better.

I just pan sear as usual. I do a thin layer of butter on the bottom of the pan and put a bit of compound butter on while it rests. It's from the chuck so it's generally plenty tender because of fat. For a good medium rare, flip once you start getting pools of hemoglobin or whatever the fuck the liquid that looks bloody is.
