How do you smoke your pork butt? apple wood? do you use mustard as a binder for seasoning?

hickory and peach wood. i just use brown sugar, salt, pepper, cayenne. no mustard, no binder.

>Pull from smoker, cut butts into 3rds
>Transfer to pan, fill with water, lid
>Oven 3 hr @ 180
>Drain, cool off, pull meat
>Season with 4 parts salt 2 parts pepper 1 part powdered garlic

Hickory. Nothing else. Season and wrap in film for at least 12 hours before smoking. Mop with a vinegar based sauce while smoking. Good right off, but better if wrapped in aluminum foil and left to rest for a couple hours. And I do mean wrapped. Not sat in a pan with foil covering it.

Any method more complicated is a waste of time.

Apple, pecan, or peach. Sometimes maple.

At best it'll help with getting a good bark. Diluted apple juice might bring some flavor to the table on something like pork ribs, but isn't going to move the needle on a butt.
