Whats the problem with using "wrong" type of potato for french fries? I used RIVIERA potatoes. First boiled them, rest overnight in a fridge then fried them. Some of them came out crisp but majority got easily burned and were all around soggy. It's the issue with the potato or with the process?

First of all, Riviera potatoes? Riviera potatoes are waxy, not starchy. They hold their shape well, yes, but they contain far too much moisture and far too little starch. Which means instead of crisping up like a proper fry should, they just weep.
Now, as for your process... boiling then refrigerating? I suppose next you'll tell me you seasoned them with Himalayan pink salt? You par-cook fries with a blanching fry, not a boil. You gently fry them at a lower temp to cook the interior, then chill, then fry again at a higher temp to crisp the exterior. Itโ€™s called double frying, not double boiling like some sad bistro experiment.

Double frying is a better way for sure. But if you were to boil, add vinegar to the water to prevent the fries from breaking apart as much, itโ€™ll make a small difference. Also, yes you chose a bad potato.

Do not boil, first fry at 140 celsius, let it cool off, then fry a second time at 170 celsius.
