Ive worked firsthand with multiple industrial confectioners, ive seen firsthand this exact process but for making nougat. In the first part, where theyre whipping around the corn syrup, these use machines for that with a rotating arm, I was always terrified for the workers watching them in action, the machine is called a “cream beater”.

If you have any questions regarding processes ill answer them, ive worked with many big names, theres a lot of crossover in the industry in terms of process, but its also a very small world and due to NDA I obviously wont be naming names.
