What are the steps required to become an iron chef?
I bought a nice knife, a shapton whetstone, a good quality cutting board, a bunch of bowls for mise en place and I have all kinds of pots and pans already.
I've been practising making omelettes, I don't really like omelettes so I've been making them in the traditional French way to master the technique but I don't know where to go from here.
One thing I'd like to do is to master my knife skills first, is there a resource teaching all the canonical cutting strokes?
What kind of dishes should I practice making? I got a potato ricer for Gnocchi but haven't made any yet. Fresh pasta and Gnocchi with different sauces seems like a good bet since my grandmother bought me a pasta maker. Proteins with pan sauces is another.
I have a lot of time since I'm underemployed as a kitchen hand which is mostly cleaning shit and nobody likes me enough to take me under their wing.
