I liked his older videos where he would just not have half the ingredients and make shit up and cook anyway, it felt more real. It has been interesting to see him get better at cooking over time but I don't really care as much for "pro home cook" style wankers that describe the umami mouthfeels and shit unless I'm trying to actually learn a new recipe.
