Is this pan salvagable? It's carbon steel, I wanted to season it but I accidentally left it for 8 hours at 250C which left it covered in a huge layer of burnt oil. I subsequently boiled it in a large pot which got rid of most of the burnt oil but when boiling water in it it still gets a weird brown color and smells disgusting. Not sure what to do now.

I have a 12 inch cast iron pan which I use for all my cooking. I bought this small pan for small things like sauces and such. Don't know the difference between carbon steel and stainless steel pans honestly.

the smell and color is oxidation of the bare steel.
I would scrub it out with soap and water and immediately dry and rub with oil. this will insulate it from air and moisture and prevent oxidation.
I think the most fool proof method for seasoning is to fry potato skins with salt and oil. when its brown and short of burning dump it out and wash with soap. you might have to rub it with oil after washing and drying but eventually as it develops a patina you wont have to.

carbon steel rusts immediately in contact with water. even in the air it will rust fairly quickly. don't even bother before adding a layer of seasoning at least. or stop wasting your time with this useless shit and use a stainless pan.

use way less oil when u season ur stuff
basically wipe it all out. also i prefer using my hands to wipe it out so i dont leave grains of paper fiber. using your hands to clean out the excess oil will leave a small amount of oil that is ideal for seasoning and baking it in

Yeah I learnt this after a couple times. I've been using a cast iron exclusively for the past 5 months after a lifetime of teflon so I'm still learning stuff.
