People usually say they notice a difference. Anything processed with enzymes like turning corn starch into corn sugar usually has some changes in flavor that some people might not like. Like how some people also say lactose-free milk smells a bit off because of the lactase enzyme breaking down the lactose. Cane sugar smells almost a bit fruity I guess and kind of tastes that way.
