Did you try using butter and salt? Usually does it for me. Black pepper is good too.

I like mine soft scrambled with olive oil, some black pepper and red pepper flakes. Lately I've been putting the salt in the pan while I'm scrambling them - I thinks its better that way.

You are probably overcooking them

Butter in a ceramic pan, dumb 2 eggs whisked with cayanne pepper and shredded cheese

The real trick to cooking eggs is when you put in your butter, it can't be sizzling as soon as it hits the pan. When the eggs are put into the pan when this butter is sizzling, it means the moisture gets cooked out of the eggs, and its fucked as a result and tastes bland. Basically to make good scrambled eggs you need to put the butter in as the pan is heating up, when the butter melts slowly, no sizzle bullshit, add the eggs (with or without milk, it doesn't matter), and wait for the edges to cook, then just keep pulling the eggs around as the edges get cooked and you get the curds you want. Then turn off the heat when it's almost done, eggs will cook themselves off residual heat from the pan and the heat trapped inside the cooked eggs (applies to boiled eggs too). Then it's just perfect.

Tell me your process step-by-step. How hot is your pan? What are you putting in with them?
