Teflon is only bad when you heat it to arround 500f. Otherwise it's inert. You could eat a pans worth of teflon chips and you'd shit out a pans worth of teflon chips. The seasoning of a cast iron pan is just polymerised oils, which you're making on your food any time you cook with fat/oil. So every time. You're getting all of that color because you're using a metal spatula on a fairly rough bottomed pan. It'll do that less as you use it, smoothing out the bottom.

Cast iron is my favorite to cook on. Nice big beefy pan that performs for 15-20 bucks and you can fry shit in it. Definitely for a gas stove or a flat iron stove don't use that shit on glass for obvious reasons.

the limiting factor is typically the non-metal handle and they rec not heat it over 180c because of the handle material

It shouldn't, but cheaper triclad pans will have the middle aluminum layer exposed around the rim. I don't see it getting in your food, but if you put it in the dishwasher it will erode over time and can leave a sharp edge.

Yes, and the light maintenance needed to prevent rust ensures your pan looks good all the time whereas teflon will get worse over time no matter what. You can damage teflon with aggressive cleaning, not so with cast iron.

Polymerized oil is literally plastic.

With cast iron, you're cooking on plastic that's not nearly as chemically stable and inert as teflon.

That's why you season it. If your iron pan rusts when you put anything wet in it then it's not seasoned. If it is there's no issue.

Also, iron oxide isn't poisonous in the first place. You would have to be using a completely rusty unseasoned pan for all your cooking for it to ever be close to.a problem.
