Why are Italians so autistic about food compared to other cultures/cuisines? As long as its not an abominations other cultures seem far more open to alterations to dishes or fusion dishes.

They'll freak out when its not "authentic Italian enough" but who said they were ever making an authentic Italian pizza?

Its pretty funny to see because they'll talk about these dishes like they're sacred family recipes and traditions that go back centuries, when the majority of famous Italian dishes were invented around 1900 - 1920. So we've just hit the 100 year mark for a lot of them, and even then a lot of them were modernized in America by Italian-Americans and then that trickled back to Italy. So when they talk about "purity" and "tasting like home" they're talking about from dish that was most likely invented in Chicago

Because eating food was a social occasion involving many different people, it didn't involved tense conversations with your parents whilst they chatted about work
They also see food as something positive, not something to be afraid of like most generic whites are because of saturated fat and salt scare campaigns

I think a lot of it has to do with Italian immigrants being unable to bring nothing to the table skill wise or culturally except for cooking, so that's what they focused for. A lot opened restaurants, prided themselves on their cooking on "something" to give America. This inflated a lot of their ancestor's self importance when it comes to cooking, as if they were experts in cuisine and not that it was the only thing they had. They also believed their bullshit that they used to get customers in, that these recipes were hundreds of years old and not invented either that decade or was a regional dish that they've alterered to be more paletable.

So fast forward even more to the current day and a bunch of White Americans who are in denial that that's what they are, and get butthurt by the Americans have no culture meme, LARP as real Italians because their great grandmother was, and act like they can dictate Italian food.

They were like "these British, Irish, and German immagrants really love my food" but they didn't know that those people came from cultures with dogshit cuisines and were very easily impressed.
