Why aren't knishes more popular?

Especially the round ones that sometimes have an egg wash on the top. Those are delicious. Make knishes more popular.

The corned beef knish is to die for, as is the more standard potato-and-cheese knish.

The problem with baked pierogi varieties is that the baking process often fucking destroys the filling
Boiling is much gentler and it will usually just cook your filling slightly. The midpoint is frying them and that gives you a nice crust without destroying the filling.
I did baked pierogi a couple times (with yeast dough and without) but I don't believe it to be worthwhile.

you are doing it wrong
the best way to make dough is to boil, let cool, and then pan fry
you have to pre-gelatinize the starches - let that set up structurally by cooling it - and then fry it in oil or butter

>why do people not make them
cuz its 4-5 hours of work
