I made it with Golden Curry with some soy sauce/ketchup/grated apples, and think it's pretty neat. Probably won't surpass Indian curry (which is what I was raised with), but it's much easier to make if you use a box. It's like the halfway bridge between Anglo-French stews and Indian curry. Though I missed the wonderful, strong beefy smell when I was braising the beef I fried in tallow before it got drowned out towards the end when I added the curry cubes, overpowering the original fragrance.

Bonus, how do you make your Japanese curry? Do you just follow box instructions, or do you add things to enhance it? What box is your go-to?

I make my own curry blocks, toss a chunk into some beef broth add ketchup soy sauce and Mike’s extra hot honey, simmer it till thickened and season to taste and pour some over a bowl of cut up frozen fried chicken cutlets that I’ve air fried and rice. Every curry has its place and nip curry makes for an easy weeknight meal.

the box stuff doesn't really hit the way the restaurant stuff does
but I don't even put all that other stuff in it, I just make the sauce and have it on a cutlet with rice

I use a 50/50 mix of hot Vermont and med. hot Kokumaro. It's the closest I've managed to get to the now-dead Curry House restaurants, which were owned by the same company that makes the blocks but had its own unique blend that they don't sell. I actually just made some a few days ago, it was the first time I've ever done the full homestyle kind with meat and veg in it, usually I just make the sauce and serve it with katsu.

I sometimes get a lot of vegetables in the summer, so I sometimes make curry using only the moisture from the vegetables.
