Preparing potatoes does not take 30 minutes. You skin and cut them up in 3-4 minutes (for a large serving of pierogi ruskie you need only a couple of big potatoes), and then leave them to boil for 20 minutes, during the time which you can do whatever else.
It depends on the filling but for pierogi ruskie the filling is not really a lot of time, just boil potatoes until soft and brown some onion, then mash it all together.
Most of the time is spent on filling them especially if you are inexperienced or do a large batch (unlike everything else time spent filling and forming the pierogi scales linearly with the amount ). For 1 or 2 people, you can relatively easily do it in around 30-45 minutes, including the resting of the dough.
If you do it for more people, then you can save a lot of time because making the filling and making the dough are completely independent tasks so you can do them at the same time, albeit the dough does not take much time to do, maybe 10-15 minutes mixing and kneading plus some rest time.

Nah, they are meant to be cooked and eaten on the same day. I miss grandma's varenyki - some with potato stuffing, some with cottage cheese, but the best ones were with cherries. And then there are those with ground meat, patte, hash.

Never had pierogi before, but I often make mandu and freeze them. You can heat em in a pan but I like to air fry them as well. If there is a difference between fresh and frozen, I can barely tell. Just make sure to freeze them on a tray first before putting them into a container, so they don't stick together.

But don't buy the packaged frozen shit from the store. That's nasty.

This is bullshit and you know it. I don't even bother with making them in low quantity, 100 is the minimum.
Using hot potatoes for the stuffing is an awful idea. So just cook your potatoes in advance. Not only that but if you "just mash it all together" you will end up with chunks.
You want to use pic related or meatgrinder to get smooth texture for white cheese and potatoes.
Chopping up onions and getting it nice and caramelized also takes 30 minutes or so. You also want to make the garnish.
You can do some things in parallel but you can't do everything at once.
Having 2 people in the kitchen will cut prep time in half for sure.

Freshly cooked potatoes are simply more sticky, in general if you buy wrong potatoes you are fucked. I like it when the filling is very firm because it will get softer later on and it's easier to work with.
I like using 1/3 smoked pork belly, 1/3 fresh lard, 1/3 caramelized onions for garnish.

Cooked from raw is better than fried, but when reheating, frying is better than boiling them again or microwaving.
They are the best freshly cooked, with cracklings and fried onion, you leave a bit of the salty water on them and it mixes beautifully with the melted lard.
