I just made Beef Stroganoff with left over beef stew.

I used beef stew juice so I just added water with it after adding it to the onions to thin it and I reduced it slightly and thickened with about a tablespoon of sifted flour. If you do this cook it for a bit before adding the sour cream to kill off any flour taste.
