I've used it for both those things as well as other things like >>21489207 and fake hotdogs. For those, just process pork, egg white and cubes of frozen milk, add enough of the powder packets to season it all, add starch to hold together then pump into casings. I use sheep because that's what's available to me but hog is firmer/less delicate. Steam to set/cook through and that's it. The powder already tastes smokey so smoking the sausages isn't really necessary.
