>thd tiny ass loin was already ar 120 after the sear
>take both off the heat
>probe the meat and half the potatoes
>everything back in the pan with a pad of butter, two cloves of garlic, a sprig each of thyme and rosemarry
>in a 425f oven
>move the butter and herbs around after a couple minutes
>take the meat out at130 after about 5 minutes, herbs as well
>potatoes bake for another 10 minutes as the meat rests.
