follow any generic homemade ice cream recipe (the one with the ziplock bag full of ice & salt), but add in a bit of strained pumpkin mash & whatever spices you like to the cream. for the pumpkin mash, buy any pumpkin or squash you have available to you, cut it in half, clean out the guts and seeds with a sturdy spoon or icecream scoop (save seeds for later), lay it down in a pan, and bake it at 350F for an hour. when done, the leathery skin should peel right off of the meat, which you can either eat as-is or mash like you would a potato.
for the seeds, you can either try planting them if you have the space (pumpkins are low maintenance bastards that can produce up to a dozen pumpkins per vine from a single seed, depending on the variety), or you can oil & salt them, spread them out on a baking sheet, and toast them at 350 for 15-20 min. you can bake them at the same time as the pumpkin/squash if you prep accordingly
if you're having trouble separating the seeds from the guts, try submerging them all in a bowl of water, and let them soak for 15 min
it all sounds like a whole lot of work, but i find it relaxing
