Why does day old chicken taste so bad? Am I doing something wrong?

The only decent way to eat leftover chicken is the grill it on charcoal, or smoke it with hardwoods.

I grill a pound or two of chicken and will eat it 3-4 days in a row in different dishes.

Is there like a rub I can use? Marinate it? I just use this "chicken and rib spice" most of the time.

Yet chicken soup just gets better over a few days. What a mystery.

I hope you're wrapping it tightly and keeping it refrigerated. Oxygen and temperatures will make meat spoil faster. We really have nothing to go on as to what you're doing wrong.

>cook chicken drumsticks as directed
>garlic, onion, paprika, salty spice rub thing
>put it in a tupperware container
>go to eat it the next day in a salad
>just a weird bad taste
I have to just cook what I'm eating that day I suppose.

Did you put the tupperware in the fridge? Is the fridge cold enough? These are the pertinent questions.

I cook a chicken and I will eat off it for up to six days without worry and no 'weird bad taste'.

How fresh was it before you cooked it? So many factors. It should not go bad overnight if you are using proper sanitation and cooling practices and the meat is fresh.

Some people seem more or less sensitive to the off flavors that develop in leftover meat. It's not going bad if you read this >>21493717 but it's just oxidation that occurs. Chicken and turkey were always the worst tasting leftover meats for me. But I know I've tasted leftover chicken and thought it tasted awful because of that while someone else tasted it and said it was fine.

Yes the tupperware goes in the fridge which is cold enough.

It's not "going bad", I just think it tastes really bad compared to freshly cooked.

Surely there's a marinade I can do to help with this.

I've heard this complaint from people recently. And "warmed over flavor" seems to be a thing coined in 2003, so I guess that's why I'm surprised there's a wikipedia page and a name for something I didn't grow up knowing about.
I thought it was just common knowledge that leftovers are never as amazing and fresh as the first day. I don't know if you want to marinate everything. Leftover chicken is good with bbq sauce and hot sauce over it before reheating. Or turn it into a soup. Like you say, you're just extra sensitive to it. I always brine chickens and turkeys and pre season chicken parts with garlic salt and spices the day before cooking it, so it doesn't have that plain bird smell ever, it always is seasoned throughout so it smells more like onions and herbs and whatever. I'm sure that helps keep my leftovers from seeming funky.

According to that wiki page you would need to be a chemist to prevent this shit.

I'm pretty sure that this has gotten worse since 2022 (in the US). I've assumed it's some new bullshit they give the chickens that ends up causing their meat to oxidize more than before.

youre supposed to raise them until they're big enough to eat, not eat them straight after hatching
