There is no american hegemony when it comes to Japanese food.
The only other country outside of Japan itself that you can have decent Japanese food, sushi included, is Brazil.

Brazil you actually get the dishes very close to what they are at home with some interesting twists/fusions. I had a donburi in Canada and a donburi in the US and both were sweet, like what in the actual fuck. Then I realized its due to local culture and taste preferences, and sweet doesn’t fly well with Japanese food.
savory/umami or well seasoned with salt which is what I assume are the simple flavors you refer to, which is where Japanese food sits generally.
Not that I haven’t had my fair share of bland dishes in Tokyo. But it’s usually pretty decent, I only ever had as good in São Paulo. I think it’s because salt and most importantly MSG is super common there and was never vilified. Brazilians are actually obsessed with both. Both boosts almost every single Japanese dish.
