Breaded chicken is nice. I would pair it with a salad or some mashed potatoes.
Pasta is also nice on its own.

But that thing is like two separate meals into one.

It’s not the chicken you like, it’s the crispy fried breading that soaks up all the sauce. The chicken inside is still boring, but you don’t notice it as much. Eggplant Parmesan is the same thing. Nobody is goin oh man I LOVE the flavor and texture of this bland fuckin vegetable goo in the middle of my fried bread. Anyway, pan seared or grilled chicken can be good with lighter sauces and Alfredo if you really get a nice crust and brine / season it generously. It just doesn’t pair well with tomato sauce in general.

It depends. Almost every eggplant parm I’ve ever had has been soggy and flavorless. I should make it at home one of these days and make sure the eggplant is thick enough and properly chilled before frying to see if it’s any better. My mom really likes eggplant Parmesan.
